Baking Kate: Cookie Dough Truffles

Happy Monday, everyone!
I hope you're all having a great start to this week. And if not, this recipe post is perfect for you.

So here's the situation.
A while back I had friends over and we baked chocolate chip cookies for dessert. As you do. By the time we were supposed to form the dough into small balls, half of the cookie dough was gone. Surprise? Not really, because who can possibly resist chocolate chip cookie dough?! This led me to an idea (that has been done so many times before but I have never given it a try until now. Shock!). Take out all the ingredients that may go bad and voilà, you've got chocolate chip cookie dough to store and eat whenever you fancy a cookie dough truffle. Let's be honest, though, it's not a question of how long you can store them, but of how long they will survive for. These truffles are not only great as a snack inbetween but also as chunks in vanilla icecream. Basically Ben & Jerry's Cookie Dough icecream homemade.

Cookie Dough Truffles

Ingredients
Truffles:
- 180g or 0.8 cup caster sugar
- 70g or 0.35 cup brown sugar
- 180g (unsalted) or 0.8 cup butter, melted
- 1.5 tsp vanilla extract
- 150g or 1.2 cup plain flour
- 100g dark chocolate chips

Decoration:
- 100g dark chocolate (e.g. dunkle Kuchenglasur, dunkle Kouvertüre)
- biscuit crumbs
- white chocolate

Instructions
1. In a large bowl, combine the sugar.
2. Add the melted butter to the sugar and mix.
3. Add vanilla extract and stir well.
4. Sift in flour and add carefully to the sugar-butter-mixture. Blend but don't overmix.
5. Throw in the chocolate chips and carefully mix again. 
6. Form small dough balls by carefully rolling a teaspoonful of dough between your hands. Set them aside on a plate and leave them to cool in the fridge for at least 30 minutes. 
7. Once fully cooled, cover your dough balls in melted chocolate. Decorate with biscuit crumbs or white chocolate. Leave them to set in the fridge.
