Cheesecake Swirl Brownies
Servings: 20 brownies Prep time: 20 mins Baking time: 30 mins
Ingredients:
Brownie batter:
- 113g unsalted butter, melted
- 90g dark chocolate, chopped
- 2 eggs
- 200g caster sugar
- 1/2 tsp vanilla extract
- 85g plain flour
Cream cheese batter:
- 43g caster sugar
- 225g cream cheese
- 1 egg yolk
- 1/2 tsp vanilla extract
Method:
1. Preheat your oven to 180°C. Line a 20cm square baking tin with parchment paper.
2. Add the chopped chocolate to the melted butter and leave to stand for a moment. Once the chocolate is melted, stir together.
3. Meanwhile, whisk together eggs, sugar and vanilla extract until the mixture turns light and fluffy.
4. Pour in the chocolate-butter-mixture around the side so as not to knock out any air. Blend carefully.
5. Slowly fold in the flour. Pour the batter into the prepared baking tin.
6. For the cheesecake mixture, whisk together all four cheesecake batter ingredients. With a tablespoon, dollop the mixture over the brownie batter.
7. Using a butterknife, swirl in the cheesecake batter.
8. Bake on the middle shelf for about 30 minutes, or until the edges start to turn golden brown.
9. Set the brownies aside to cool in the baking tin. Once cooled, cut them into squares and enjoy!
